Once simmering is completed, remove the top to check the moisture level. To analyze it properly tilt the pot slightly and look for pooling water. If no water oozes out then simmering is done. In evenly cooked rice there won’t be any moisture left or no burning marks at the bottom of the pot. After ensuring that simmering is completed, brace yourself for the setting step.

Close the lid airtight, turn off the burner and let the rice sit there for 10 minutes. Monitoring of heat is very crucial during setting, if you are using an electric burner then you should shift your pot to another part because the burner might still get more heat than required which results in the burning of rice from the bottom. The setting helps to reabsorb some of the starch of rice through which a sticky or gluey appearance is avoided.

Rinsing the rice before cooking has two notable advantages. First, it helps to wash away any possible pesticide residues which were sprayed on rice plants at the pre-harvest stage, last but not least is that it reduces the formation of bubbles formed due to starch while cooking. Soaking is not much encouraged because soaked rice will become too soft after cooking.

The quantity of water is very critical. For every 1 cup of rice, you should boil 10 cups of water. 20 cups of water and 2 cups of brown rice will provide you with 6-7 cups of dried and finely cooked rice. Once you observed that water reached its boiling point pour the rinsed brown rice in it, reduce the heat to medium level, and cook it uncovered for good 30 minutes. Stirring is not required but make sure that you have removed all the starchy foam formed on the surface while cooking. 


Turn off the heat and stop cooking once the timer reaches 30 minutes and Strain the rice carefully to drain out all the excessive water.

Brown rice: 1 Cup 

Water: 6 Cups

Soy sauce, salt, and seasonings for taste according to your choice


Take six cups of water in a pot for boiling, meanwhile, rinse the measured quantity of rice in a mesh under tap water. Rinsing is done to remove excess starch and any inert matter present in rice. Let the extra water drain out after rinsing and put the rice in boiling water. The temperature should be medium to prevent the overflow of the mixture.

Cook, it uncovered at uniform heat for at least 30 minutes. After completion of 30 minutes drain out the leftover water and transfer the rice to the pot again. Now your rice is ready for setting, turn off the heat, and cover the pot for 10 minutes. Completion of the setting will lead you to the final touch which is fluffing and seasoning as you like. First step:

Heat the sunflower oil at medium heat, when it becomes slightly warm add raisins and fry this till raisins swelled. Raisins normally approximately take 30 seconds to swell up. Transfer these swelled raisins to a paper towel with the help of a slotted spoon for drainage. Add almond and curry leaves one after the other, fry them each for 1 minute, and drain them on a paper towel. Save just ¼ cup of drained sunflower oil and discard the remaining.    

Second step:

Transfer that saved ¼ cup of sunflower along with rice, garlic, and onion in an Oven and set the temperature at high. Cook it with stirring until rice becomes light golden brown, on average this point can be attained in 3-4 minutes. Then add almonds, coconut milk, raisins, and salt and cook it without stirring till the absorption of coconut milk and the proportion of rice and liquid become almost equal.
