Description of brine solution:

It is a very high concentration solution of salt in water. Also, this is known as a salt solution. I will not bore you with the stats of how much of salt in the water makes it a briny solution. But the key thing to note here is that 5 teaspoons of salt per glass of water should make it a brine solution.

Method to make brine solution at home:

Ingredients:

  • Warm water:               1 cup
  • Rock salt                  3/4 cup
  • Sugar                           2/3 cup
  • Soy sauce                    3/4 cup
  • Olive oil                      1/4 cup

Steps involved in making:

Take the warm water in a container twice the volume of water and add olive oil, soy sauce, sugar and salt in it. Stir the solution till most solubility and allow the solution to cool down at room temperature.

Dipping time varies for different pieces of chicken like for skinless breast it will be 2 hours, for bone-in pieces it will be from 4 hours to overnight. One whole bowl of brine is enough for 6lbs of a whole chicken or bone-in chicken pieces and for 10lbs of boneless and skinless chicken breasts.

Drying the chicken to remove extra brine:

Drying is done to maintain the moisture level of chicken at the optimum level. KFC uses the tossing method for drying and repeat it seven times. For taste development, this step does make a difference while making KFC chicken at home.

I will list down the challenges faced while getting all the recipes required while making KFC chicken at home. Because if we leave some ingredient out while making the chicken, you will never get the KFC taste because all the above ingredients are absolutely vital in making the perfect KFC chicken. I will list down all the ingredients which i have mentioned above and their availabilty to a common person.

  1. Chicken Piece (Easy to get but make sure it’s skinned because skinned chicken makes the complete difference between a normal and KFC chicken)
  2. Himalayan salt (Fairly difficult to get and pricey as well. I will recommend using normal table salt for this)
  3. Black soya sauce (Fairly easy to get)
  4. Fresh homemade tomato ketchup (Easy to get but I would recommend making the tomato ketchup at home and check below for the process. Take 3 to 4 ripe tomatoes and add some salt in the boiling water and let t boil for 5 minutes. Now after cooling, take out the tomatoes and mix it in a blender for the homemade tomato sauce)
  5. Chopped Ginger paste (Easy to make)
  6. Chopped Garlic paste (Easy to make)
  7. Black pepper powder (Easy to make)
  8. All-purpose flour (Easy to get)
  9. Corn flour (Fairly Easy to get)
  10. Dry Garlic powder(very important) (This ingredient is one of the main reasons many people refrain from making KFC chicken at home. I will show you how to make garlic powder at home the natural way below.)

How to make garlic powder at home for KFC chicken:

I will show you the exact process behind making garlic powder at home because this is one of the super ingredient which differentiates home made KFC chicken and take away KFC chicken. First take some two to three large whole garlic and roast it in a pan without peeling for 2 to 3 minutes without oil.

Once this has been roasted, dry the garlic under the sun for two to three days. This is done to dry out the water content in the garlic. Then once the garlic has been dried, add a pinch of salt and a pinch of crushed black pepper in a blender. Now peel the flaked skin of dry roasted garlic and separate the cloves and blend all the ingredients till it becomes a fine powder. Now we have homemade garlic powder which is one of the 12 secret herbs and spices used in KFC chicken.

Step by Step Instructions on how to make KFC chicken at home:

Let us divide the steps into two parts, marination part and coating part(hidden secrets). Please be noted, the below steps are for preparing 500gm of chicken.

Marination Process:

Step 1: Take a medium-sized glass bowl and put skinned pieces of chicken for marination. Marination is the first step of preparation to make KFC chicken.

Step 2:  Now add 1 tbsp of salt. This is to enhance the marination process. Now mix the chicken well with the salt.

Step 3: Now add 1 tbsp of chilli powder/ paprika powder as per your wish and this is to enhance the spiciness level of the chicken. Now mix the chicken well now that we have added salt and chilli powder.

Step 4: Now add 1/2 tbsp of garlic powder to the chicken. As I said earlier, the addition of garlic powder is extremely important for making KFC chicken.

Step 5: Now add two tablespoons of vinegar and two tablespoons of chilli sauce. This step is to enhance the texture of the chicken.

Step 6: Also finally add 1/4 cup of milk to the chicken. This is to even out the extra spiciness that gets added by all the chilli powder and chilli paste that’s been added. Now mix the content well for 2 to 3 minutes for the paste to be evenly distributed across the chicken.

Now let it sit well for 5 minutes and cover the bowl with cling wrap and keep it in fridge for 1 to 2 hours. Marination is important while making KFC chicken because this helps to get the secret flavours and aroma of the chicken.

Coating Process:

Now take the marinated chicken from the fridge and allow it to defrost for 30 minutes. This ensures the excess water from frost drains out.

Step 1: Add 1 cup of flour into a separate bowl. This is for giving a coating base for the chicken and also to be super crisp.

Step 2: Add 1/2 cup of cornflour to the flour which we have already added in the bowl. Corn flour provides a firm grip to the flour texture of chicken and also provides extra crispiness to the chicken.

Step 3: Now add 1/2 tbsp of salt and 1/2 tbsp of crushed flaked chillies.

Step 4:Now add 1/2 tbsp of garlic powder. All the coating content are added in a separate bowl without the chicken.

Step 5: Now add the marinated chicken pieces into the flour mix and spread them out separately. Shake off the excess flour from the chicken.

Step 6: Now add 1/2 cup of water to the leftover marinade mixture. You can add eggs too as well if you wish. Now dip the floured chicken which we made earlier and dip into the marinade mixture for the second flouring process

Step 7: Second flouring of chicken is super important to maintain the crisp texture of the KFC chicken. In fact, KFC chicken has this hype because of the two flouring processes which make it super crispy and tasty as well.

Now that we have made our chicken ready, Take a bowl full of oil and heat it up to 350 degree fahrenheit and fry them till golden brown.
