Step by Step Instructions on making mug pancakes from scratch:

1. Before starting with the recipe, the first step is to make the pancake batter. In a mixing bowl, combine one tablespoon of oil (vegetable or canola) and gently brush the sides of the bowl with oil to avoid any sticking of the flour mixture to the bowl.

2. Now add 1 cup of flour to the bowl. You can use all-purpose flour or any other type of flour. Before adding the flour, make sure you sift the flour using a flour filter to remove any lumps or any foreign object present in the flour.

3. Now, gently whisk the flour using a hand or an electric whisker to ensure the flour gets evenly mixed and does not contain any lump.

4. Now add 1/2 cup water to the bowl and stir the flour mixture gently. I would suggest you add lukewarm water to the flour to ensure the consistency of the batter. Keep the water in the oven under heat mode for 45 seconds to get lukewarm water. Keep on stirring until you do not see any flour powder in the mixture.

5. Now add some salt and sugar to the mixture. I suggest you add 1/2 teaspoon of salt and 1/2 teaspoon of sugar to the mixture. You may adjust the amount by tasting the mixture by placing a drop of the mixture on the hand and tasting it.

6. Now add vanilla extract and mix the mixture well. The vanilla extract helps to provide flavour to the pancake.

7. Now, break the eggshell and pour the egg white and the yolk into the flour batter. You can also add only the egg whites based on your health preference. Eggs help to provide a fluffy and shiny texture to the pancake.

8. By now, you should be seeing a yellowish-brown-coloured mixture. As a final step, whisk the flour mixture containing all the ingredients with an electric whisk for even consistency of the mixture.

9. Now cover the batter with plastic wrap and place them side for 2 hours. If you make the batter the late night before, place the batter inside a refrigerator for the best experience. This also ensures you get a fluffy pancake.

10. Now, gently pour the mixture into a small mug. A coffee mug can be used instead if you do not have small porcelain mugs handy. Now take a small spoon and gently mix the mixture inside the mug.

11. The main difference between a pancake recipe and a mug pancake is that the regular pancakes are cooked in a pan, whereas mug pancakes are baked inside an oven. Mug pancakes have a similar texture to cakes since they are baked in the oven.

If the toothpick is not coming out clean, then it means that the cake is still raw inside.

14. Remove the mug from the oven and keep the mug aside for 5 to 10 minutes to let the mug cool down. Now add two teaspoons of maple syrup or honey on top of each mug cake. You can also add toppings like chocolate chips, chocolate sauce, whipped cream, or fruit or berries such as blueberries. I added a slice of strawberry on top of each mug cake in my case. I personally like using chocolate chips as a topping. The results were fantastic.

The prep time using this method is 5 to 10 minutes assuming that you have the pancake mixture ready the previous night. The cook time is 3 to 4 minutes.

The second step is to leave the mixture for 5-8 minutes until bubbles start appearing on top of the mix. It should have a sand colour on inspection. The consistency of the pancake mixture should be thick. This helps to provide a fluffy pancake. Now pour the mixture into each mug place the mug on a flat tray surface.

In order to make microwave mug pancake recipe, you will have to use a special mug that can hold the mixture. Start by placing the pancake mug on the microwave tray. Make sure you use a microwave-safe mug while baking pancakes in a mug.

Place the microwaved tray in a microwave, set the timer to cook for 1 minute at 900 watts, and wait for one minute. The temperature of the pancake should be between 210 degrees Celsius and 220 degrees Celsius. Now, after 2 minutes, place the mugs away to cool the pancakes.
