Ingredients
  

  • Two duck thighs
  • One onion sliced thin
  • Teriyaki sauce
  • ¼ cup ginger grated (freshly grated is better)
  • Two garlic cloves crushed
  • 1 tbsp soy sauce
  • 1 tsp sugar adjust according to your preference
  • ½ cup rice jasmine rice is preferred
  • 2 tbsp Mirin sweet cooking rice wine
  • 1/2 cucumber
  • ½ cup bean sprout freshly chopped
  • One spring onion chopped finely (optional)
  • 1 tbsp sake
  • 1 tsp sesame oil toasted and ground with a pestle and mortar to make a fine oil
  • 4 eggs

Instructions
 

  • Firstly, take the duck thighs from the package and place them in a rice bowl for washing. You can buy the duck thighs from the local supermarket. Wash the duck thighs thoroughly under fresh flowing water. Also, if you wish to remove the bacteria present in the meat, add two teaspoons of turmeric and three teaspoons of curd and wash them well. This helps to remove any existing bacteria present in the flesh.

  • In a rice bowl, add two teaspoons of mirin, soy sauce, teriyaki sauce, 2 teaspoons of sesame oil, one teaspoon of sake. Mix well till the ingredients and some salt for taste. Now add some chili flakes and 1/2 teaspoons of garlic powder and keep the rice bowl aside

  • Now, take an aluminum tray and place the washed duck thigh. Now pour two bowls of water into the tray for baking the meat. Now pour the marinade on the duck thighs. This marinade helps to provide the flavor for the meat.
  • Now, place the tray in the oven at 180 degrees celsius for about 30 minutes, and then after that time, turn off the oven and keep the meat inside for another 30 minutes. This helps to provide a crispy outer layer, and the meat inside gets cooked well. To check if the duck is cooked, place a knife on one of the thigh parts. If it cuts easily, then it is ready for serving.
  • After 1 hour, after the meat is cooled, take the thighs out from the oven and make sure to remove all the excess marinade from them by wiping with a clean kitchen napkin.
  • For preparing the rice, soak the rice in water for 30 minutes. Once it is done, drain it and rinse it under running water. Drain the clean water and set it aside. Boil the rice in enough water for 45 minutes in boiling water. You can also use a pressure cooker for cooking rice if you have one.
  • To check if the rice is cooked, take a small amount of rice in your hand and rub it on your palm. If the boiled rice is devoid of any moisture, it is ready to be used in the dish. Place the cooked rice aside for later use.

  • Now, take the prechopped vegetables and put them in a frying pan with two teaspoons of olive oil. The vegetables to be chopped are cucumber, onions, cabbage, bean sprouts, and finely sliced ginger.

  • I will explain how each vegetable should be chopped to get the authentic Japanese Wagamama dish flavor. Cut the cucumber into thin little strips. Then, chop the spring onion finely. Slice the ginger into delicate thin layers. Grate the carrots and chop the bean sprouts.

  • Now, add the boiled rice to the frying pan with the vegetables.
  • Add salt, pepper, and soy sauce and teriyaki sauce to taste. You can also add a pinch of sugar if you like it sweet.

  • Cook until all the vegetables are soft and tender.
  • Now, take the fried and cooled duck thigh and mash them gently until the meat is fibered. In a bowl, put the boiled and fried rice with vegetables. Now place the shredded duck meat on top of the cooked rice.

  • The final part is the preparation of the half-boiled omelet. Add the beaten eggs to the pan and stir the egg white in a circular motion for 2-3 minutes on high heat. The goal is to get the egg yolk cooked but not scrambled.
